Why do restaurants and food-service buildings need HVAC handled differently?

Food-service buildings move far more air than a typical office, because kitchen exhaust hoods pull conditioned air out continuously. When makeup air does not match that exhaust, the building runs negative, doors stick, and hood capture drops. Pro-Serv services the hood, the makeup air unit, and the HVAC system together.

A commercial kitchen hood removes hot air, smoke, grease, and conditioned air from the building. That air has to be replaced with makeup air.
